The idea for this series came from a market stall. A local specialist with a huge variety of fungi -- and these pink oysters stopped everything. People just ooh and aah over them. They are the most beautiful ingredients, visually spectacular, and once you get them into the studio under dramatic light, the folds and layers reveal something extraordinary.
